Temper your chocolate with the table method.
Hold the sandwich cookie on the tips of your fingers. Submerge each cookie into the tempered chocolate. Shake excess chocolate back into the bowl. Slide the chocolate-coated cookie off of your fingers using your thumb.
Place cookies on parchment or wax paper to cool. You can leave your dipped cookies plain or decorate using a variety of toppings, like chopped nuts, toasted coconut, and sprinkles. Be sure to add toppings while the chocolate is still wet.
You can use the same chocolate coating technique for other centers such as graham crackers and Nutter Butters.
